What to order at a Parrilla: Matambre a la Pizza

Move over Pizza Hut’s “meat lover’s pizza”, that is for sissies compared to Matambre a la Pizza.

We have mentioned matambre in a couple of blog posts now. Matambre is a very common cut of beef in Argentina that Americans would rarely eat. It is the stomach muscle of the cow and could be referred to as flank steak (which is more accurately vacio in Argentina). The matambre cut is a large, flat sheet of meat that rarely gets thicker than about half an inch.

The name matambre comes from the Spanish “mata hambre” which means hunger killer.

What I want everybody to know about right now is a ridiculously indulgent dish called matambre a la pizza. This is when they take this sheet of flat beef and use it as a pizza crust. YES! Can you believe this?

This is truly the most Argentine, portenio thing I have ever heard of. It combines gaucho culture (cowboys / hearders) and the Argentine Italian culture in the most direct of ways.

AND it is awesome.

Think of a matambre: it is a very tough, flavorful cut of beef that in this case is usually boiled in milk for 2-3 hours to soften it before making the actual pizza. Then once boiled, you take the matambre at put it on the parrilla (grill). Once you could the first side and flip it over, you condiment with your pizza sauce to your liking, and add cheese and toppings.

Imagine this with other cuts of sausage on top! A meat lover’s dream that is unheard of in the United States. I wonder what the cartiologist community would have to say about this? Not likely they would approve.

This is certainly a treat to be had by any foreigner at least once during their stay in Argentina.

Which wine should you pair if going to the parrilla after a wine tasting? I would go for a Malbec-Cabernet blend or something else sturdy to stand up to the greasiness of this dish.
