Just in the past week the hot summer weather has really hit Buenos Aires! Clients of ours have been arriving at our wine tastings in Buenos Aires looking for a cool glass of white wine! Last night I went to a small dinner party on the terrace of a friend’s apartment in Palermo. We were all still a little tired of beef from the numerous asados we all attended during the holidays so we decided to make the meal vegetarian.
One of my friends roasted a variety of vegetables including bell peppers, fennel, eggplant, and garlic. I decided to make a recipe that my mother made frequently during my childhood summers: a couscous salad (recipe below). With the meal we had a chilled bottle of Latitud 33 Sauvignon Blanc, produced by Bodegas Chandon in Mendoza. The wine is a typical Sauvignon Blanc with a light yellow green color. The nose of the wine is a little sweet with grapefruit and other citrus flavors, and even a little passion fruit. In the mouth it is young, crisp, and refreshing.
The wine worked nicely with the meal, but it would also go great with lighter fish and seafood, light cheeses, or pastas.
Summer Couscous Salad:
1 box couscous (I prefer the Israeli couscous if available). Cook according to directions on package. Cool.
Add:
-Sliced cooked chicken (about a cup)
-3/4 cup kalamata olives, pitted and sliced thinly
-1 red pepper cut in thin strips
-3/4 dried currents or raisins
-1 bunch green onions or scallions, diced
-Fresh cilantro – chopped – about 1/2 cup (to get cilantro in Buenos Aires go to a vegetable stand run by Bolivans)
Dressing (about 1/3 to 1/2 cup total)
-3 to 1 ratio of orange juice to olive oil
-At least 1 tsp cumin
-Salt to taste
Toss dressing with couscous
