Sparkling Wine Secondary Fermentation

Two methods can be used for sparkling white wines: 

The Italians developed the Charmont process, in which the wine undergoes secondary fermentation in large stainless steel vats under pressure—rather than in small bottles like classic Champagne.

Very cheap sparkling white wine merely has carbon dioxide blasted into the vat like a soft drink rather than waiting for secondary fermentation to finish creating the bubbles naturally.
