Additives during Purification

Many winemakers put in additives to enhance their wine (or to some, create an inorganic wine). Common additives are preservatives (discussed later) while others are for flavor enrichment, aroma control, or fermentation speed.

Concentrated grape must or extra tannins can be added to enhance flavor, while copper sulfate may be used to manage wine’s aroma if it is too strong.  Extra yeast added during fermentation can accelerate fermentation, along with thiamine hydrochloride and diammonium phosphate.
