Organic Acids in Grapes

Three essential organic acids are found in grapes: citric acid, malic acid, and tartaric acid.

Citric acid disappears quickly in the fermentation process, malic acids are converted to lactic acids, and stable tartaric acids begin to form wine’s root acid.
