Night Harvesting
Some wineries harvest their grapes at night, a practice referred to as nocturnal harvesting. Grapes must be cool, not warm, in order to press them and during the hot days of harvest season, lots of energy is put in to cool down the grapes.
Nocturnal harvesting curbs this energy and also the energy of the harvesters who prefer working in cool rather than hot temperatures. While grapes are growing, high temperature differentials are good, but after grapes are ripe cooler environments are better, making nocturnal harvesting an innovative, though not yet widely practiced, idea.
