Botrytis cinerea

One good type of fungus for most varietals is the Botrytis cinerea, or the fungus that causes the noble rot. The noble rot that attacks select grape vines and causes the natural grape sugars to become highly concentrated. This rot facilitates the grapes to produce sweeter, creamier wines, or wines with higher alcohol content—depending on how many days the winery decides to ferment the grapes.
